Coq au Vin (Chicken in Red Wine)

Ingredients:
1 package frozen,skinless boneless chicken thigh meat from Sam's
1 bag (16 ounces) baby-cut carrots
8 ounces (1Jar) tiny pearl onions
1 bottle salad real bacon
1 teaspoon salt ¼ teaspoom pepper
2 cloves garlic, finely chopped or replace last three
ingredients with Canadian Steak Seasoning from Sam's or

½ cup Romano cheese

2 cups red Shiraz wine


Bouquet Garni  

Tie 4 sprigs parsley, 2 bay leaves and 1 teaspoon dried thyme leaves in cheese cloth bag or place in tea ball

¾ cup Chicken broth
1 pound small whole button mushrooms

 Directions:

  1. Place chicken in 4 quart Slo Cooker.  Add remaining ingredients except mushrooms, flour and water.
  2. Cover and cook on low heat setting 8 to 10 hours (or on high heat setting 3 to 5 hours) or until pieces of chicken are no longer pink when center of thickest pieces are cut.
  3. Remove any fat from surface.  Remove Bouquet Garni.  Stir in mushrooms.  Mix flour and water, stir into chicken mixture.
  4. Cover and cook on high heat setting about 30 minutes or until mixture is thickened.
  5. Serve with a crusty bread to soak up all of the wine flavored sauce left in the bowl.
