Summary
This is a great recipe for all occasions, fantastic for Super Bowl parties.  They can be made the day before and are just as great the day after the Super Bowl for the kids when they come home from school.

Ingredients:
1 head of cabbage cored and shredded
2 Tbls. olive oil
1 ½ Lbs. hamburger browned and crumbled
2 tsps. salt
1 tsp. pepper
1 box Pillsbury Hot Roll mix
2 eggs (one for roll mix and one for egg wash)

Shred cabbage
   (I have found that it is easier to shred the cabbage with the core holding the cabbage together, so I shred in a circle around the core.)  I also, use a mandolin to shred the cabbage, but you can use the Kitchen Kutter if you have one...it will just have the core in the mixture.

Sauté cabbage in olive oil until decreased in size and golden brown on some of the cabbage edges, approximately 30 minutes.
Add salt and pepper, stir and set aside

Sauté the hamburger and crumble. drain all the grease off of the hamburger and then mix thoroughly with cabbage.  Set aside until dough is ready and rolled out thin.

Dough:

Pillsbury Hot Roll Mix, follow directions on package.
roll out very thin and cut into squares.  It is not necessary to let the dough rise.

Homemade pizza dough or bread dough can be substituted for Pillsbury mix. Jimmy's Italian Food Store | 4901 Bryan Street | Dallas | TX | 75206 also has frozen dough for sale.
Add mixture of cabbage and hamburger to each square of dough

Fold corners of dough into center and seal by pinching together.
Place on cookie sheet seams down 
Whip 1 egg in small bowl using a fork and then brush egg on outside of Glumpkies.
   
Bake in preheated 350oven for 20 minutes or until egg wash is golden brown.
Serve immediately.

*Warning:  Centers are extremely hot.  

*Note:  Do not pre-cut dough squares, they'll shrink up on you.  Just rollout dough on clean flat lightly floured surface.
Add mixture to one edge of dough, now cut the dough, fold corners together, place on cookie sheet.

If you are going to use this recipe for appetizers then make them smaller.  They are great for Super Bowl parties or snacks for the kids after school.  They can be eaten cold, room temperature or hot out of the oven.
