Summary People have been trying to improve this recipe for years...why? It's not your Jello recipe. It's good old fashioned cheese cake. The only thing missing is; it's not from New York, but with a little persuasion maybe hubby will take y'all there. You treat him nice now he'll treat you nice later; how do you think I made it to every state in the Republic (except Maine).

Ingredients: 2 Tbls. graham cracker crumbs 4 (8oz.) pkgs. cream cheese, softened 1 cup sugar 4 eggs 1 tsp. lemon juice ½ tsp. Watkins Madagascar Vanilla ¼ tsp. lemon zest ⅔ cup apricot preserves 2 Tbls. water 1 qt. whole berries, cleaned and stemmed
Directions: Sprinkle bottom of lightly greased 9'' spring-form pan with crumbs combine cream cheese and sugar, until well blended. Add eggs, one at a time, mixing well after each. Mix in juice, vanilla and zest. Pour into pan. Bake in 325o F oven for 50 minutes. Cool. Mix preserves and water together over low heat. Arrange berries on top of cheesecake; spoon preserves over berries. Chill. |
