Mom's Avocado Salad
Summary
This salad is my go to weekday lunch salad, snack salad, late dinner salad, etc. Why fill upon Iceberg lettuce when you have these good ingredients?

Mom's Avocado Salad
Ingredients:
1 Red Onion cut into chunks, six cuts
1 Zucchini, chunked large
1 Cucumber, peeled, sliced lengthwise, seeds removed, chunked. 
2 Roma tomatoes, diced
2 Avocados
2 Tbls. fresh Lemon juice (2Tbls.=1 whole lemon)
1-2 Tbls. Extra Virgin Olive Oil
Salt & Pepper if desired

Directions:
Cut first four ingredients as required.
Place in medium bowl.
Peel and chop one ripe soft avocado and drizzle EVOO and Lemon juice.
Add to bowl.
Stir until avocado creams & coats vegetables.
Peel and cut up second avocado and gently fold into other vegetables.
Do not stir.
Salt & Pepper if needed.
