Impossible Pie
Summary
Also known as Custard Pie.  Magically makes it's own crust! Perfect for any holiday!
Like magic it layers into crust, custard and coconut topping.

6 - 8

Ingredients:
½ cup Bisquick
¾ cup sugar
4 eggs
2 cup milk
1 cup shredded coconut
1 ½ tsp. Madagascar vanilla
¼ cup butter, softened

Directions:
Combine all ingredients and pour into 10 inch buttered pie pan. 
Bake at 400 degrees for 25-30 minutes until custard sets. 
Cool.

Notes:  ½ cup of Bisquick can be substituted by a mix of:
½ cup of flour 
¾ tsps. of baking powder 
¼ tsp. of salt  
1 Tbl. of oil or melted butter

Any fruit can be served with this pie for extra color and flavor plus a dollop of whipped cream.

Read coconut packages closely and you'll notice that there are two types available: flaked and shredded.  Flaked coconut is cut into small pieces and is drier than shredded coconut.  Either type works well in most recipes, but using shredded results in a moist and chewy finished product.
