Ingredients: 1 package frozen skinless, boneless chicken thigh meat 2 batches home made fresh salsa ¾ cup chunky peanut butter 1 thumb of fresh ginger root, peeled and finely chopped Salsa: 10 roma tomatoes 1 large onion quartered 8 cloves garlic 6 jalapeños ½ bunch cilantro 4 limes chop all ingredients in porportion. You'll probably make 4 batches of salsa, if your using the Salsa Maker
Directions: 1. Place chicken in 4 quart slo cooker. Mix remaining ingredients except peanuts. Pour over chicken. 2. Cover and cook on low heat (1.5) setting 8 -10 hours or until juice of chicken is no longer pink. When center of thickest part is cut. Remove chicken mixture from cooker and pour over brown rice. Add remaining ½ bunch cilantro chopped on top. Sprinkle dry roasted peanuts over top. Note* Very hot and spicy dish PG moms and Gramps may pay dearly!!!!!
