Italian Pot Roast

Ingredients:
5 Lbs,Beef Roast
1 Large Onion Chunked

2 Tbls. Garlic Minced

2 Large 303 Cans Petite Diced Tomatoes

4 Potatoes, peeled and quartered
1 Small Pkg Finger Carrots
2 Tbls. Italian Seasoning
2 Tbls. Fresh Basil

½ Tbls Oregano

¼ Tsp. Cayenne Pepper

1 Tbls. Ground Cummin

1 Tbls. Dried Cilantro

Directions:
2 Tbls. Dried parsley.  Brown roast on all sides and remove from the gourmet cooker.  Add remaining Ingredients and put roast on top.  Simmer 8 hours or until meat is extra tender.  Serve with bucatini Pasta or perciatelli pasta.  Pastas are usually only in Italian shops, but are worth the hunt.  Jimmy's downtown Dallas   www.jimmysfoodstore.com  carries the bucatini.    Boil Pasta according to directions - do not over cook!!!!  Rinse with cold water and return to pan.  Add ¼ stick of melted butter, stir pasta until coated with butter.  Add ¼ to ½ cup of grated romano cheese or asiago cheese.  Serve on side of roast.
